Sweet Potato Soup

I bought this book last summer from Amazon.com because I was running out of ideas for gluten-free cooking. A lot of gluten-free recipes use ingredients that can only be found in specialty stores like Trader Joe’s and Whole Food. Since I live in China and do not have access to specialty stores, I needed a variety of recipes to experiment with.

Here’s a simple recipe for sweet potato soup.

Ingredients:
2 tsp vegetable oil
1 1/2 coups chopped onions
1 cup diced potato
2 cloves garlic, minced
4 cups diced sweet potato
4 cups vegetable stock
1 1/2 tsp ground ginger

Directions:

  1. In a large saucepan, heat oil over medium heat. Add onions, potato, and garlic. Cook, stirring frequently, until onions are tender.
  2. Add sweet potato and vegetable stock. Simmer, covered, for 20 minutes or until vegetables are tender. Add ginger.
  3. In a food processor or blender, puree soup in batches. Heat to just below boiling. Season to taste with salt and pepper.
