I bought this book last summer from Amazon.com because I was running out of ideas for gluten-free cooking. A lot of gluten-free recipes use ingredients that can only be found in specialty stores like Trader Joe’s and Whole Food. Since I live in China and do not have access to specialty stores, I needed a variety of recipes to experiment with.
Here’s a simple recipe for sweet potato soup.
Ingredients:
2 tsp vegetable oil
1 1/2 coups chopped onions
1 cup diced potato
2 cloves garlic, minced
4 cups diced sweet potato
4 cups vegetable stock
1 1/2 tsp ground gingerDirections:
- In a large saucepan, heat oil over medium heat. Add onions, potato, and garlic. Cook, stirring frequently, until onions are tender.
- Add sweet potato and vegetable stock. Simmer, covered, for 20 minutes or until vegetables are tender. Add ginger.
- In a food processor or blender, puree soup in batches. Heat to just below boiling. Season to taste with salt and pepper.
