hi, I have not roasted peanuts, but when I roast cashews or pine nuts I have to watch them VERY carefully at 350F, just a couple of minutes and they're toast, as they say!

I have taken to roasting both cashews and pine nuts at 150C (around 300F) and though it takes 15 minutes to 20 minutes, or longer if they go in a cold oven...there is a wider window to get them out. If I get a phone call they won't burn!
