I used two eggs and 2 tablespoons of applesauce and 1/3 of a mashed banana and also added 1/3 cup of Pamela's GF Baking mix! I ran the oatmeal threw the food processor and I chopped up the choc chips with a food chopper. I also used chunky PB. Very yummy cookies! Thanks! Made these this evening.
