Dairy Free Chicken Spread
The VitaMix comes with a variety of recipes ranging from appetizers, beverages, sauces, soups, salad dressings, and desserts.
There aren’t that many recipes that is completely Jason-friendly, meaning recipes using ingredients that Jason can eat. I went through the recipes to mark the ones that Jason can eat.
Today’s experiment was the chicken spread and I improvised a little. I used the food processor to make the chicken spread instead of the VitaMix because food processor is easier to clean.
Ingredients:
1/2 cup mayonnaise
1 cup chicken, cubed
1/8 cup sweet green bell pepper
1/8 cup onions, chopped
1/2 cup celery
1 teaspoon salt or seasoning (optional)Directions:
- Make homemade mayonnaise.
- Stir fry chicken and add green pepper, onions, celery and seasoning towards the end.
- Place mayonnaise and chicken cubes in the food processor container. Mix until well blended.
- Add remaining ingredients (green pepper, onions, celery) and roughly blend to suit your preference of chunkiness.
Chicken spread goes very well with gluten-free bread, tortilla chips, and celery/carrot sticks.
