Homemade Mayonnaise
The other day I was looking for mayonnaise at Carrefour supermarket and couldn’t find regular plain mayonnaise. It seems as if all the mayonnaise sold in Shanghai/China are the sweetened kind packaged in plastic squeeze bottles. Kewpie seems to be a popular brand but whatever happened to regular plain mayonnaise sold in a jar without added sugar?

Then a friend told us Kewpie in a red jar tastes like regular mayonnaise. The blue jar is the sweetened kind. So I went looking at Carrefour again and bought a red jar to try. Indeed, the mayonnaise tasted taste normal but when I looked at the ingredients list in the label, I saw that they added MSG! That won’t do because Jason is allergic to MSG!
I decided to try making our own homemade mayonnaise from scratch. I have a food processor and a VitaMix so should be pretty easy, right? A quick search on Google showed a bunch of mayonnaise recipes.
Ingredients:
2 egg yolks
1/4 tsp white pepper
pinch of salt
3 tablespoon lemon juice
1 cup olive oilDirections:
- Use a whisk, mixer, or food processor to mix egg yolks, pepper, salt, and lemon juice together.
- Add 1/2 up oil, one drop at a time, to the mixture while mixing. Whisk/mix until mixture thickens, adding oil drop by drop.
- Add the remaining oil in a slow, thin stream, whisking until well blended and mixture is thickened.
And that’s it! Fresh homemade mayonnaise without added sugar, seasoning, preservatives, and MSG! Unfortunately, homemade mayonnaise won’t last as long so don’t make a lot at a time. Place mayonnaise in sealed container and use within the week.
