Flourless Cookies

This recipe is taken from The Gluten-Free Gourmet Cooks Comfort Foods. This is one of my favorite cookies recipes. It’s surprising that the cookies turn out really well despite not having any flour substance.

Ingredients:
1 cup brown sugar
1 cup peanut butter
2 eggs
1 1/4 teaspoons baking soda
1 teaspoon vanilla
3/4 cup chocolate chips

Directions:

  1. Preheat oven to 350F. Grease cookie sheets or line (ungreased) with parchment paper.
  2. In a bowl, blend the brown sugar and peanut butter.
  3. Add the eggs and mix to blend.
  4. Spoon in baking soda and vanilla and mix about 1 minute.
  5. Pour in chocolate chips and blend by hand.
  6. Drop cookies 1 heaping teaspoonful at a time on cookie sheets, leaving 1 1/2″ between them to allow for spreading.
  7. Bake 8-11 minutes.
